Fabulous Freezer Meals Helpful Hints and Orange Dreamsicle Recipe

I recently won a new cookbook in a giveaway and was super excited when I received it this week. 
Fabulous Freezer Meals by: Jenny Ahlstrom Stanger.  I havent cooked anything out of it yet but am super excited to add some things to my April menu and stock my freezer too.  What I wanted to share with you today were some tips that are included through out the book. 

Helpful HInt:
To avoid crying when you cut a fresh onion, freeze the onion for at least 15 minutes before cutting.  Also, for easy dicing dont cut off the root of the onion.  Instead, cut the onion in half through the root and in a gird-like pattern using the lines on the onion, make the slices.  The root will hold the onion together while you dice it. 

Helpful Hint:
A great way to save money on pizza toppings is to buy them in bulk.  You can purchase extra large bags of pepperoni and shredded cheese, and large cans of toppings like pinapples and olives.  For each topping place 2 cups in each of several zip top plastic bags then label each bag.  Place all of your smaller bags in a larger ziplock bag before freezing.  Pull out as needed and microwave.

*I actually do this one already.  I buy our pizza toppings at Sams.  You can get a huge bag of pepperoni, huge can of pizza sauce for under $3 .  I also buy my cheese here.  Then I divide them up and pull out as I need them.  My boys like to snack on pepperoni so it really ends up saving me.  I hadnt thought about adding the smaller bags to a larger bag though that would save room as well.

I thought i'd share this recipe for Orange Dreamsicles page 64 also.  I havent made these yet but will be giving them a try maybe this weekend.  My little one love popcicles.  Makes 7   popcicles

6 ounces (1/2 of 12 oz can) orange juice concentrate
1/2 cup water
1 pint vanilla ice cream softened or plain yougurt
In a blender, mix all ingredients until smooth.  Pour into popsicle molds and freeze for one hour .  Insert sitcks.

With it getting hot outside it is time to start looking for recipes that will cool you off.

WALGREENS RR

Walgreens deals this week

 I made my 2nd trip to Walgreens this week for the. 69 Gatorade.  My boys use Gatorade all the time with baseball but the first trip they were out of most flavors and their is a 10 limit.  While I was there I got several items that were register rewards.  However, a tip for all of you new to couponing since I had to learn the hard way.  You may already know.  If you use register rewards on a transaction you don't get register rewards back.  Makes since I suppose.  I totally messed up today though I had several things to get RR and didn't realize this and used the ones I had .  I was very not happy when the cashier hands me my receipt with no rewards.  ERGH.   I still did great I suppose but just knowing I could have done better slap drives me crazy.  Anyway, live and learn I guess. Have a great St. Patrick's Day.

Lunch time blues

Lunch time seems to be the hardest meal for me to put on the table or get together.  Seems like we are forever running through a McDonalds or other fast food chain at lunch .  I know terrible.  Every now and again leftovers and lots of sandwich's.  I really just dislike preparing food for lunch time I don't know why? 

Anyway, looking for new great ideas for toddler lunches and mommy lunches.  Send me some =)

Picante Shrimp and Pasta

I just Love cookbooks.  The ones from little churches, or women's groups, or schools are always having some secret goodies in them that you will really cook.  This is  a rrecipe from Southside Elementary Cookbook  .  They put together this little cookbook a few years back for a fundraiser.  I think a cook book makes a great fundraiser by the way,  I really don't care for all of the high price junk that gets sold in the name of fundraising that you'll never use again. What about you.  Anyway, we like this recipe and I haven't cooked it in a while.  Think I need to add this to April's menu.

1 tsp. Vegetable Oil
2 small green bell peppers cut into strips
1 c. sliced mushrooms
1 tsp.  dried Basil leaves crushed
1/4 tsp. garlic powder
1 c. Pace Picante Sauce
2 medium tomatoes, coarsely chopped
1 1-lb medium shrimp peeled and  deveined
3 1/4 cups cooked tube pasta

Heat oil in skillet.  Add peppers, mushrooms, basil, and garlic , cook until tender crisp.  Add picante sauce, tomatoes, and shrimp.  Heat to a boil.  Cook over low heat about 8 minutes or until shrimp are done.  Add pasta, stir and heat through.

MY REVIEW:




Indivisible touches the many problems people have in their lives and the secrets they may be hiding.  We all have something we necessarily may not want to share with the world. Kristen Heitzmann writes about the  families in small town Redford. As in most small towns their is gossip and innuendo, stares and guilt.  Characters Tia and Jonah must deal with their past before they can ever have a future. Heitzmann touches on the many secrets families may have (abuse, addiction, affairs, betrayal).  It keeps you looking for more.

Indivisible began a little slow for my taste.  However, once I got into it I found it to be an intriguing story from a small town much like my own.  A little bit of a love story and a little bit of a mystery made for a very good read.  It definitely picks up the pace after the first chapter or so.

Piper the quirky young baker is  my favorite character.  She is young and naive and cares about her friends and those who are unique.  If you read the book you will see what I mean by unique.  It takes a special person to reach out to someone who is bullied and stands out as odd.  Piper is working to succeed at her own and overcome the many obstacles from her family , boss, and the Redford crazies along the way.
Jonah Westfall chief of police is investigating a string of unexplained animal cruelty.  The mystery behind this cruelty will lead him down an interesting road that is much unexpected and keep you looking for more clues to why someone would perform such hideous acts.    He is full of masculinity and a man of distinction.  No wonder so many women have their eye on him.  Makes for an entertaining journey as he tries to rekindle his lost romance with Tia. 

I would gladly recommend Invisible to anyone looking for an engaging entertaining mystery romance.

Coupon Trip Headache

OH my goodness.  Went to Publix today since we had an orthodontist appointment and were in town.  Let me just say it took longer for my cashier to go through my coupons than it did for me to go through the store and pick them up.  CRAZY.

  Now I understand that the coupon policy has changed and that cashiers have to do their jobs etc so please no hate mail here.  But listen to this experience.

  I set my coupons up beside where you do your debit card ,. and am going through making sure I have all the products for the coupons organizing for the cashier.   Well as I am doing this she yanks them up and spreads them all over the belt where you do groceries?? So, I am thinking OK.??  Then she proceeds to go and tell me how you have to be careful with coupons blah blah there are many  not real and shes not losing her job over them blah blah and they really just take up so much time.  Obviously this cashier isn't fond of coupons. I am patiently ignoring Georgia the cashier at this point  trying to be understanding and polite.

 OK, so then I have the dentastix coupons for $2 off 1 , (I have 2 coupons and 2 dentastix) so she has to call the manager to know can she use 2 of these.  So, then the manager explains nicely yes I can. Then my cashier Georgia is like but why that's more than one coupon.  Poor lady she needs someone to explain it to her I suppose.   OK, I should have asked the manager to stay and do my coupons from here it only gets worse lol.  So, then Georgia proceeds to scan a couple of coupons scan a couple of groceries.  I'm thinking what on Earth?  Usually it has been my experience that the cashier scans the stack of coupons at the end of your purchase, and uses the receipt to go through if she needs the price for something.  Oh, no not Ms. Georgia the cashier.   She would pick up a coupon and be like "OH, no has this grown threw?"  Then, ask the bagger to get it back out so she could check the price.  Seriously?!   She also would stop and scrutinize the coupon and be like are you sure you got this? Then she would tell me  " I just need them to see me on video asking about the coupons so there is  no problem?  "

 Anyway, you get the picture this went on and on and on.  I must have began to look very frazzled because the dear lady who came up behind me was like you are fine honey doesn't bother me a bit I think its great you use coupons =) thank you nice lady.  I must say my bag boy was awesome the cashier would be fussing about cake mix and he'd be like yes mam just bagged that SEE.   By the end of this trip I was thinking dear goodness is this worth the trouble.  Today's savings was $47.87 and out of pocket I spent $233. (ouch).  Not the best but heck that's a tank of gas or almost right.
