I create a menu each month for our family dinner meals. I hope this may give some of you new ideas for hot cooked meals. Please feel free to share your menus and recipes I love them.

Time to start thinking about my March menu. I can't believe this month has just flown by hasn't it?
It's warming up here in Florida , so I guess it will be time to put the soups and stews away and look for more Spring like foods. What are some of your favorite things to eat in the Spring? Strawberries are our #1. We love them anyway you serve them. My kids favorite way is just plain old strawberries just the way they are. My favorite is strawberry shortcake.
We celebrate strawberries in this little town. We're a town who has a lot of agriculture and so strawberries are a big money maker for a lot of families here. There is a huge Strawberry festival held every year on our historic main street. We have a Strawberry Pageant, where a Strawberry Queen and Princess are selected. Shortcake contest, Strawberry Pie , a great big strawberry mascot & so much more strawberry fun.
Oh, yummy! I have never entered the food contest, but we have a great ti me trying out some of the different contenders. MMM good right!
My Granny use to make a strawberry pie that I would hurt someone for. It was a ribbon winning pie. Man was that thing finger licking good. She never shared the recipe. After she died I tried to make one how I thought she made hers. Boy was that ever a disaster. One of them" I Love Lucy moments" I sometimes talk about. I don't even know how I did this but I somehow exploded red sticky jello all over my kitchen. You talk about a mess. After that I vowed to never ever try and make a strawberry pie again. So, you won't see strawberry pie on my menu this spring, but boy did I love that pie.
What about where you are from, is there a food that means something to your town? A recipe your Grandma use to make that you only wish you could?

This is my Grandmas recipe and oh boy do I love this stuff. It is so yum yum. Spring is in the air and it makes me long for strawberries, and blueberries and sunshine oh boy. I love this time of year.
2 c. blueberries
2 c. sugar
1/4 c water
3 T water
1/2 c. softened butter
1/4 c. cornstarch
1 & 1/2 c. flour
1 c chopped pecans
1 pkg 8 oz cream cheese
1 ( 12 oz.) container Cool Whip
Combine blueberries, 1 cup sugar, and 1/4 cup water in a sauce pan. Cook over low heat until blueberries are soft about 5 minutes. Combine cornstarch and 3 Tablespoons of water in a cup. Stir well. add cornstarch mixture to blueberries. Stir until thick. Set aside to cool. Combine flour, butter, and pecans mix well. Press into a 13X9 dish. Bake at 350 degrees for 20 minutes. Let the crust cool. Combine cream cheese and 1 cup of sugar. Beat until smooth and fold in Cool Whip. Spread over the cooled crust. Top with blueberries. Refrigerate.
We are having BBQ chicken and mozzarella wraps. Yummy! My boys have ball tonight and we'll be late so this is quick and easy. I had some BBQ crock pot chicken in the freezer already so all I had to do is thaw it out. Bake the wraps until cheese gets bubby and yippy dinner is served.
Pot roast is in the crock pot and this mommy has been busy busy cleaning today. I honestly do not know how this house can look like a tornado hit it so often . Anyway, I love my crock pot. It is so nice to know a nice hot meal will be ready at the end of a day like today. What is on your table for dinner tonight?
Miss Tracy's Stuffed Peppers are a delight and EASY. I don't know about you but this Mama loves EASY. They do have a bit of kick to them , so if you do not like spicy foods you will probably want to adapt the recipe.
Tracy's Stuffed Pepper's
*bell peppers (however many you are cooking for I did 4)
*3-4 chicken breast
*1 can of hot Rotel tomatoes
*1 can of original Rotel tomatoes
*chicken bouillon cube X2
*optional Spanish Rice and Crushed Tortilla chips
Place chicken breast , water, bouillon cubes in crock pot and cook on high 4 hours. I use enough water to cover chicken. Shred chicken and add cans of Rotel tomatoes cook on low a couple of hours.
Cut the tops off of your bell peppers, and pull out seeds , then fill with chicken mixture.
Here they are before I baked them. YUM
Bake at 350 degrees for 25 minutes.
I then crush up tortilla chips on top and serve over Spanish rice.

My toddler loves Chuggington. A preschool show about trains and trainees that airs on Playhouse Disney. I love the bright colors of the train, and the songs are very catchy. Little C goes around singing "Chuggington, chuga chuga chuga Chuggington", it is so darn cute. Never fails to make me smile. Nana says she goes around singing Chuggington all the time (LOL). It definitely sticks in your head.

Smiley Cookies did just that today they put a smile on mine and Little Man's face. We came home from a very trying time in town to a box by the door. Smiley Cookies Yay! I opened them up and they came in a great box. I can't wait to find another use for this cute box it has smiley faces all over it and is very durable. = a happy me! Then the cookies are as cute as can be and pretty darn large! My guy wanted one immediately!! Of course I let him have one. We had a play date this afternoon and shared them also. They were a success there too! Yay! They were so big he actually only ate 1/2 then he wanted to save it for later. Yes, later came and he came back and finished that cookie.
He had to have just 1 bite before we took the picture.

The paper that came with the cookies even says you can freeze them. I really really like this about them. I think I am going to try to sneak a few into the freezer before my 3 kiddos make them all disappear tonight. You can also customize your own cookie. I'm thinking these would go over really good at a kids party ... definitely will be keeping these in the back of my mind.

This is one of my new favorite recipes!! Why? My teenage daughter loves burritos. You Mamas with teenagers and kids for that matter know they always come in from school STARVING. Mine certainly do. Well this recipe makes 16 burritos. I have made it 3 times and gotten 16 all 3 times. I usually use 1 pan for dinner and then take the 2nd pan and put into individual zip lock bags and freeze. Then she can just pop one out for a snack , or me for lunch and microwave and its just so EASY.
This recipe calls for rice. I cook rice quite often so what I usually do is cook a little bit extra and freeze it , and then I always have some handy when I want to make this recipe.
Chicken Burrito Recipe
2 cans re fried beans (I usually use only 1 can)
3/4 cup salsa
4 cups cubed cooked chicken
2-3 cups cooked rice (I used white long grain)
4 cups shredded cheese (or to taste). Divide into 2 cups + 2 cups. Save 2 cups to top burritos at the end of baking.
16 medium size tortillas
Mix all ingredients together. Spread 1/16 of mixture on tortilla and roll up.. . Place in large rectangular casserole dish. Bake at 350 for 20 to 30 minutes. The last 10 minutes put remaining 2 cups of cheese on burritos. Serve with favorite toppings like salsa, taco sauce, sour cream, etc. Two of these are very filling. I like to make a side of Spanish rice too. Makes the meal go further if needed. If cooking from frozen plan on almost doubling the cook time. Enjoy! Or you can microwave a frozen single burrito it takes 2 minutes and 30 seconds in my microwave.
I wanted to share my favorite new dinner dish with you guys. I got this recipe from http://www.mommyskitchen.net. Tina over at Mommy's Kitchen is one of my favorite blogs to follow. You will see I use her recipes and menu ideas quite often. I love her site and she always has pictures which I can go back to if I mess up along the way.
No Peek beef tips is my new recipe. Now, I make beef tips quite often in the crock pot. I always prebrown the meat before I put it into the crock pot though. What I like about this recipe is you just dump the stew meat right into your dish and add other ingredients and you are ready to go . It is quick and easy to prepare and I am telling y'all delicious!! I have now made this twice and the family loved it both times.
2 lb. Beef Stew Meat
1 can Cream of mushroom soup
1 – Packet Brown Gravy Mix
1 pkg. Lipton dry onion soup mix
1 – Small Can Mushrooms
1 Cup Water or Ginger ale
Add cubed meat to a 9 x 13 inch pan. In a big bowl mix the remaining ingredients together and pour over the meat add mushrooms and stir to coat. Cover with foil and bake at 300 degrees for 3 Hours do not remove foil until done. Serve over rice, mashed potatoes or noodles.
SUPER excited about my coupon saving this week. It took me forever it seemed like to organize my coupons, make my list , get it in my head what I was buying on sale , and then making a list of what we needed also. It is the rainiest nastiest day out today but I said by golly we are going to the grocery store & Walgreen's and going to try this kind of shopping. A few bumps in the road I am definitely learning as I go. The Walgreen's system is a bit confusing to me. It probably shouldn't be, cant be rocket science right? But I still at this very moment do not understand why I had to add something for .99 to make my coupon work. OK but that's all good. We are making progress and now I am on board 100% after the total saving from today. I don't care if it takes me a while to be organized it was worth it.
$110.24 SAVED today! I'm so excited so proud of me =) It is only my 2nd week of couponing. Imagine when I know what I am doing.

2 boxes of toothpaste @ .50 after coupon and RR
2 packs of Knorr pasta sides .15 a pack
2 Lloyd's pulled pork $1.75 a tub
and the best deal would be that Publix accepts Mother Earth coupons . Mother Earth has a coupon for $10 off of $50 or $15 off of $75. Yep $15.
That is just some of what I bought not to mention all of the regular priced stuff also. Now let me say again $110.24 saved.

27 Days away until we do the potty dance around around and around this house! So, excited to see all of these little ones dancing around with their parents. What fun!! Can't wait until my party pack arrives from house party. This is my first party with them. The planning has begun. I'm thinking cute little iron on shirts may be in order. I need an idea for a diaper free or potty cupcake lol. I love planning a party. How about you?
Have you already potty trained ? Or just beginning any tips? I have a 14 , 12, and 2 year old. My 14 year old was a daughter and she potty trained fast and EASY. 12 year old is a boy and I remember him taking FOREVER or that's how it seemed at the time . I'm hoping if my 2 year old hears from his bubba all about the potty he will want to do it to and maybe will be a tad bit easier. He loves everything his big brother does so maybe? or wishful thinking?
What about potty chairs any advice? recommendations? It has been 10 years since I needed to purchase one of those. Has technology changed the potty chair too? Who knows what it will take to get this little man trained. So, far he has shown no interest so we shall see. I'm not in a huge hurry either. He is our last baby (or that's what we're thinking at this point). Any tips for me?
