Hi, I know I haven't posted anything foodie in a while.  I've been super crazy here lately but I have not forgotten you and am sure to have some goodies soon.  Not to mention the October menu will be right around the corner.  Where does time go?

Summer Travel Food

When we plan out our summer, we try to balance fun outings with time with friends and some family trips. Our family trips are often road trips. Usually 2-3 hours laughing, singing, listening to Bill Cosby and listening to “Are we there yet,” “I need to go to the bathroom,” and the always popular, “I’m hungry!” While we do have to stop the car for the bathrooms, and occasional coffee shop, I do try to pack healthy snacks to eat in the car.

A few weeks ago, I stumbled on a recipe for homemade fruit roll-ups. Now, my son wouldn’t know what a fruit roll-up was if it hit him in the head. He does, however, love its thicker, more wholesome cousin, fruit leather. Its one of his favorite snacks. I looked up some recipes in various places on the Internet, and this is the recipe I came up with...

Homemade Fruit Leather

2 cups pureed fruit

sugar and lemon juice to taste, if needed (I haven’t used any yet, but always taste the fruit to make sure.

You will also need parchment paper (I found unbleached) and a fine mesh strainer if you want to remove the seeds (I’ve done it both ways)

Wash and dry the fruit. Puree the fruit. An immersion blender works best, but a food processor will also work. Place fruit in a small sauce pan and heat until just boiling. Remove from heat and taste your fruit. Add sugar or lemon juice as needed, 1 tsp at a time.

Line jelly roll pan with parchment. Cut to fit, so it curls up the sides of the pan. Spread fruit over the parchment, making sure there are no holes and its not spread too thin. You do not have to cover to the edge of the pan.

Bake at 140 degrees for 8-10 hours (I usually start it before I go to bed and let it cook on low all night) I check it about 1-2 hours into the dehydrate process)

Cut fruit leathers apart into desired shapes. Store in a sealed container or Ziploc. When you eat the fruit leather, peal off the parchment paper and eat the fruit. Discard the parchment.

Guest Chef Post CMIOG Recipe

I am super excited to share a guest chef with you.  Tiffany from Tiffany's World shared a family favorite with us.  Stop in and give her a visit and thank her for this yummy recipe.  I don't know about you , but I'm excited to give it a try. 

This is a family favorite. This brings back memories of childhood, waiting for dad to come home so we can start dinner! It's warm and inviting, but it can be varied to fit your tastes... Literally it can be done a million different ways! (And leftovers are BEST!) Bone-in chicken, boneless, different soup, different veggies, different seasonings, different starch. And you can really make it up as you go! Just remember ratios....

Here's my Chicken that Makes Its Own Gravy (CMIOG, for short!)

6-8 chicken tenders, 4-6 chicken breasts, or various chicken pieces ($2)

canned or frozen pearl onions 1/2 bag frozen ($.75) or 1/2 can (1.99)

1C mushrooms (canned $.69)

1C sour cream ($.99)

1C shredded cheese ($.69)

1C rice ($.50)


1. Preheat your oven to 350 and place chicken in a baking dish... 8x8, 9x12, depends on how much chicken you need to cook!

2. Sprinkle chicken with salt and pepper and bake up to 30 minutes, until the chicken is ALMOST done.... But not quite.

3. Remove from oven, sprinkle canned pearl onions, drained, and sliced mushrooms over the chicken

4.  In a bowl, mix 1 can cream of mushroom soup and 1C fat free sour cream.  If you don't like sour cream, try evaporated milk.  Stir in 1C shredded cheddar cheese and spread this concoction over the chicken.
5. Sprinkle with paprika and bake for 30-45 minutes, until the cheese looks melted in the sauce.

6. Prepare rice while the chicken cooks. If you prefer, try mashed potatoes, noodles, or even broccoli.

7. Serve.... Scoop the rice, etc on the plate and spoon the chicken with all the sauce goodness! And try not to lick the plate clean!!!
I served mine over rice with roasted broccoli and Stouffer's spinach souffle!

5 Things About Me and the Kitchen

  1. I can not make a pancake to save my life.  I know they are easy right and I love them.  It becomes a disaster every time I try.  Do you have a food you just can not make even though it is EASY?
  2. Lunch is the hardest meal of the day for me to plan or prepare. 
  3. I love all of the cute cupcakes and cakes.  I often try to make them.  Sometimes they turn out great many times they turn out just flat out ugly.  Cake decorating was not a gift granted me.  And, yes I have taken cake decorating classes.
  4. The crock pot is probably my favorite kitchen item.  You throw everything in it and leave it!
  5. I have a love/hate relationship with food and also with cooking.  I am usually really on where everything is turning out fantastic and I'm singing around the kitchen how lucky my family is for having a fabulous cook.  Or I am really off and its not fit for the dog to eat.  You never know what your going to get with me.

Monkey Pizza's

Cooking with kids Muffin pizzas or monkey pizza as my kids call it.

Needed 1 Pillsbury Pizza Crust
Pizza sauce to tomato sauce
*any other toppings wanted

Pinch off pizza crust into pieces and drop into a muffin cup.  I spray the pan with cooking spray first.
Preheat oven to temp. stated on pizza crust.
After you drop in your crust add a spoonful of sauce.
Top with cheese and other toppings.
Bakes about 10-12 minutes.

Why I love these...
*kids can easily make them on their own
*easy to individualize
*can pop the leftovers into a freezer back for a future snack

Key Lime Tarts

I found the recipe for this Delicious dessert over at one of my new favorite blogs OUR BEST BITES!  As soon as I saw them I knew I had to try them.  I love key lime. 

Doesn't this just make you want to grab a fork or spoon?

Here is what you need:

5 egg yolks
1 - 14 ounce condensed milk
limes for lime juice(took me 4 limes)
mini graham cracker pie crust (found by regular graham cracker crust)

Here is what to do ~

Preheat your oven to 350.

In a mixing bowl beat 5 egg yolks, add in can of sweetened condensed milk ( you know it has to be good with sweetened condensed milk MMM)
Then mix in your lime juice.  This was the step I didn't like juicing all of them limes Ha.  But so worth it. I spilt some of my precious juice so it took me 4 limes.  I think you could get away with 3 if your not clumsy like me. Mix it all together and pour it into your pie shells.

Put them on a baking sheet and bake for 10 minutes.

Let cool off and then refrigerate.  Serve with I just use regular cool whip.  There is a recipe for your own at Our Best Bites

Wasn't that super easy.  You can add green food coloring if you'd like.  I did Not do that.  But I love them.  Can't wait to make these to take somewhere and share.  Who doesn't want their own little mini pie?  I love taking a LOVED food to an event don't you?

Cooking with Kids #1

Easy Apple Pies

canned biscuits
apple pie filling
cinnamon sugar

Flatten out each biscuit
Put a tablespoon of pie filling in center
Sprinkle with cinnamon sugar
Fold biscuit over and press edges together
Place on baking sheet and bake until golden

This smells so yummy.

We love to read this book with these.  How to Make an Apple Pie and see the World ~

 I love this easy little recipe.  It is fun to do at home or works easily with a larger group.  We have made them in kindergarten several times !

Menu Plan Monday

We are linking up at I'm an Organizing Junkie for Menu Plan Monday this week.
As you know I do my menu by the month .  You can view my May menu here.  I do skip around from time to time though.

Here is the meal plan for this week.

  • Sunday: Chicken Fajitas, Re fried Beans, Nachos
  • Monday: This ain't you mama's meatloaf, mashed potatoes and crock pot macaroni, squash
  • Tuesday:  sausage baked ziti, Italian baked bread
  • Wednesday: no peek beef tips over egg noodles, green beans, and sliced tomatoes
  • Thursday:  Spanish rice with sausage, corn on the cob and mac n cheese
  • Friday :  Baked ham LO macaroni , squash and green beans
  • Saturday:  country style BBQ ribs, french fries, Texas toast (left overs from Friday)
  • Sunday:  Left over ham, hash brown casserole , corn

May Menu

2011 is jsut ticking by here we are it is May.  Here is our menu for the month.  I need some new ideas I know.  It's hard with a houseful of picky eaters. 

1.  meatloaf with tomato sauce, cucumber tomato salad, and corn on the cob
2.  Carino's Skillitini and Italian Bread
3.  BBQ pork on Texas toast, macaroni, baked beans
4.  Homemade Pizza
5.  BLT's, hash browns
6. Oven Shrimp Packets (new), four cheese rice, mexicorn and Hawaiian rolls
7.  Chili's chicken and baked potato
8.  Grilled hamburgers, hot dogs and chips
9.  Beanie Weenies, mac n cheese, french fries
10.  spaghetti, garlic bread
11.  Hamburger steaks with gravy, rice and green beans

Turtle Cupcakes

C's best pal H loves turtles so we recently made turtle cupcakes for a play date snack.  Pretty easy and I think they turned out cute.  Definitely cute enough for 2 year olds .  They ate them up but they specially liked the marshmallow shells.

OK so I saw these somewhere on face book a week or two ago but when I went back I could not find them to save me and give credit.  So, if the idea was yours send me your link and I'll be glad to give you credit here.

The recipe I saw used green gum drops I could not find them on my shopping trip except in a mixed bag so I made up my own clever idea and used marshmallows.  We just dyed them with food coloring which the boys liked anyway.

I just made up a regular white cake mix and added green food coloring to the batter. Baked, then iced with regular store bought white icing.  Can't get easier than this really.

One Reese cup in the middle of cupcake for shell.
Then we took marshmallows, put them in a zip lock bag after cutting in half.  A few drops of food coloring and shake shake shake.  Then set them out on a paper towel for a few minutes or plate to king of dry.  Then they are ready to go on your cupcake. 

That's it Easy Easy.

Wordless Wednesday 4/13

A recipe for  Blue Berry  Slush from taste of home


1 package (3 ounces) berry blue or raspberry gelatin

2 cups boiling water

2 cups sugar

1 can (46 ounces) pineapple juice

2 liters ginger ale

4-1/2 cups cold water

1 cup lemon juice

Blue or red liquid food coloring, optional

Fresh raspberries, blueberries and star fruit, optional


In a large container, dissolve gelatin in boiling water; stir in sugar until dissolved. Add the pineapple juice, ginger ale, water and lemon juice. Add food coloring if desired. Freeze for 8 hours or overnight.

Remove from freezer 20 minutes before serving. Stir until mixture is slushy. Serve in a chilled glass. For garnish, thread fruit on wooden skewers if desired. Serve immediately Yield: 5 quarts.

Kool Aid Playdough

1 Cup Flour
1 Tbsp Vegetable oil
1 package unsweetened Kool aid mix
1/4 Cup SALT
2 Tbs cream of tartar
1  cup of water

Directions:  Mix the flour, salt, cream of tartar, and kool Aid in a medium pan.  Add the water and oil.  Stir over medium heat for 5 minutes (mine took more like 10).  Remove the mixture when it forms a ball.  Knead it until it is smooth.  Let cool and store in air tight container. 

This smells so good .  We made this up to play with our Easter cookie cutters in play group today.

Fabulous Freezer Meals Helpful Hints and Orange Dreamsicle Recipe

I recently won a new cookbook in a giveaway and was super excited when I received it this week. 
Fabulous Freezer Meals by: Jenny Ahlstrom Stanger.  I havent cooked anything out of it yet but am super excited to add some things to my April menu and stock my freezer too.  What I wanted to share with you today were some tips that are included through out the book. 

Helpful HInt:
To avoid crying when you cut a fresh onion, freeze the onion for at least 15 minutes before cutting.  Also, for easy dicing dont cut off the root of the onion.  Instead, cut the onion in half through the root and in a gird-like pattern using the lines on the onion, make the slices.  The root will hold the onion together while you dice it. 

Helpful Hint:
A great way to save money on pizza toppings is to buy them in bulk.  You can purchase extra large bags of pepperoni and shredded cheese, and large cans of toppings like pinapples and olives.  For each topping place 2 cups in each of several zip top plastic bags then label each bag.  Place all of your smaller bags in a larger ziplock bag before freezing.  Pull out as needed and microwave.

*I actually do this one already.  I buy our pizza toppings at Sams.  You can get a huge bag of pepperoni, huge can of pizza sauce for under $3 .  I also buy my cheese here.  Then I divide them up and pull out as I need them.  My boys like to snack on pepperoni so it really ends up saving me.  I hadnt thought about adding the smaller bags to a larger bag though that would save room as well.

I thought i'd share this recipe for Orange Dreamsicles page 64 also.  I havent made these yet but will be giving them a try maybe this weekend.  My little one love popcicles.  Makes 7   popcicles

6 ounces (1/2 of 12 oz can) orange juice concentrate
1/2 cup water
1 pint vanilla ice cream softened or plain yougurt
In a blender, mix all ingredients until smooth.  Pour into popsicle molds and freeze for one hour .  Insert sitcks.

With it getting hot outside it is time to start looking for recipes that will cool you off.

Walgreens deals this week

 I made my 2nd trip to Walgreens this week for the. 69 Gatorade.  My boys use Gatorade all the time with baseball but the first trip they were out of most flavors and their is a 10 limit.  While I was there I got several items that were register rewards.  However, a tip for all of you new to couponing since I had to learn the hard way.  You may already know.  If you use register rewards on a transaction you don't get register rewards back.  Makes since I suppose.  I totally messed up today though I had several things to get RR and didn't realize this and used the ones I had .  I was very not happy when the cashier hands me my receipt with no rewards.  ERGH.   I still did great I suppose but just knowing I could have done better slap drives me crazy.  Anyway, live and learn I guess. Have a great St. Patrick's Day.

Lunch time blues

Lunch time seems to be the hardest meal for me to put on the table or get together.  Seems like we are forever running through a McDonalds or other fast food chain at lunch .  I know terrible.  Every now and again leftovers and lots of sandwich's.  I really just dislike preparing food for lunch time I don't know why? 

Anyway, looking for new great ideas for toddler lunches and mommy lunches.  Send me some =)
