January 2011 can you believe it Menu!!!

Here we go a brand new year of Menu making and so many more things to come.  I'm very excited about 2011 and all that it shall bring.

Christmas Cookie Recipes

A dear friend Jamie asked me for some cookie recipes recently.  Here are some favorites of ours Jamie.  I have so many more so, if you had so mething else in mind just let me know. 

Keylime Cookies

softened. cup butter or margarine
1 cup of powdered sugar
1 egg
1 T Lime juice
1 c. all purpose flour
1 tsp salt
tsp baking powder
2 cups corn  flakes crushed

Preheat oven to 350 degrees.  Beat together the buttered sugau until smooth.  Add egg, and limu juice.  Mixture may appear to be curded.  Stir in four, baking powder and salt.  Place the crusched corn flakes in a bowl and drop cookie batter by spoonfulls into corn flakes and toss.  Place cookies on cookie sheet bake 13-16 minutes depending on your oven.

Kathy Register's Strawberry Cookies
1 box strawberry cake mix
2 eggs
1/2 cup oil
6 oz. white chocolate chips

Mix and bake for 10 min. at 350 you can mix this up with any cake mix combo.

My Moms Oatmeal Cookies

2 sticks margarine
1 cup brown sugar
1/2 c. sugar
2 eggs
1 tsp vanilla
1 1/2 c. all purpose flour
1 tsp baking soda
1 stsp cinnamon
1/2 tsp salt
3 cups oats
1 c. raisins

Heat oven to 350.  Bet margarine and sugars, add egggs, and vanilla beat well.  Add flour, soda, cinnamon, mix well stir in oats and raising.  Bake 10-12 minutes.

Grannies Chocolate Cookies (Carleighs Favorites)

2 sticks butter
2 eggs
1 c. white sugar
1 c. brown sugar
2/3 cup cocoa- add cocoa slowly
2 cups plain flour
2 tsp vanilla
1 tsp salt
1 tsp soda
1 tsp baking powder
1 c. chocolate chips (can use any kid: chocolate, white chocoalte, peanute butter, milk choc. I like milk choc)

cream butter, sugar, eggs.  Add remaining ingredients, add choc. chips last.  Bake 350 for 12 minutes.

Bakers Note : One time I was out of baking powder so I used 1 c. plain flour and 1 c. s.r. flour worked good

Pecan Sugar Cookies
1 c. buttter
1 c. sugar
1 c. powdered sugar
2 eggs
1 c. oil
4 1/2 cups flour
1 tsp soda
1 tsp cream of tartar
1 tsp vanilla

*add pecans if your making pecan cookies or leave out and have plain sugar cookies

Mix and chill for about an hour
Bake 350 for 15 minutes use top rack bottom they'll get to brown.

Christmas Cards

Christmas is coming up quickly and it is time to think about your Christmas cards.  I love to use Shutterfly for my photo printing, and photo gifts.  Cards are a special yearly reminder that you are loved by family and friends.  I have a cute little card tree which I display all of my cards from Christmas over the holiday.  Then I save them in a "family/friend" photo album.  What do you do with your Christmas cards?  I really love the photo cards because you can see how everyone has changed from year to year.  I really love those who go all out and do something nontraditional for their card.  One year I had my two kids and dog Ripley sit in front of the fireplace with their mouths duct taped and put Silent night...It was a big hit.  I have done the park, the beach so many different things for our family photos.  Mixed and matched.  I really am looking forward to creating something special this year.

The selection of cards and designs can be used to describe any family.  If you are like me you want something really unique that's going to be talked about and remembered after you give.  A refrigerator card, or keepsake for those you are sending them to.  My design for this year will be ..oh my goodness it is so hard to decide I love them all.  The top picks for me will be Tree of hope.  This is a great card and 10%  of  this card purchase will  go to the American Lung Association.  I am also loving the Our ornament story design.  How sweet is this little card.  There is a space to tell your years story over several spots and a cute polka dot border.  And to finish off my top 3 designs for my great family I love love love the Family Wall Noir card. While you are checking out the great Christmas cards check out the great gifts Shutterfly has to offer.  My very favorite product from Shutterfly are the wonderful photo books.  I give them as gifts, buy them for  myself I just love them.  I use these books for so many different things.  First, let me say they  come in many many designs , sizes, and covers.  You can choose to auto fill, or custom fill.  I usually choose the custom or do it yourself selection.  I want my book to be just so but if you are in  a hurry auto fill works AWESOME.  I make these books for my mother of our yearly combined family vacation.  She expects her photo book and will quickly tell you if you forgot to make her one.  I use them for gifts for my sons baseball coach, and my daughters dance teacher.  I keep my babies baby book this way, I did his first year and I am currently working on from 1-2.  I love it.  I have made him an ABC about me book.  He loves it , it is his favorite bedtime story.  So, check out the site for yourself and think about creating a book of your memories.  You wont be sorry.

I am also, really looking forward to the holiday gift tags.  I have not tried these out yet, but think they are going to be a fantastic addition to our holiday season.  How can you go wrong this personalized tags are super cute and ready to go.  No looking for a pen, or maker to label yours they are printed and many cool designs as well.  For $12 for 25 with envelopes.  A special touch to your special gift.

Lastly, I would like to mention that I adore Shutterfly's wall calendars.  Last year I gave this as a gift to my Mom and Grandma.  They ranted and raved , and I did not make myself one.  Well, I missed it all year long because I had one the previous year.  I will definitely be ordering one of these this year.  I enjoy seeing my previous years photos all year long each month and at the end of the year the calendar makes a great scrapbook item.  You can find them at they  really do make a special and inexpensive gift.

Pumpkin Cheesecake Muffins

These are so easy and scrumtious.

1 pumpkin bread mix (mix as directed on box)

1 block of cream cheese, 1 egg, 2 T sugar, cream together 

Pour pumpkin bread mixture into muffin cups,  drop a spoonful of cheesecake mixture into middle of each muffin

bake as directed on the box

GOAL for September is no fried foods.  I had one slip up and made country fried steak hello fried in in the title but I some how managed to forget .  We also had french fries due to a Birthday dinner request.  Otherwise we are steering clear of the fried foods this month.  Which is very hard for these guys they are french fry junkies I tell you.

Pink Lemonade Cupcakes

Tonight I made pink lemonade cupcakes.  I loved them.  The family not so much.  LOL

They are very easy though.  Substitute one cup of pink lemonade concentrate for the water in a boxed cakemix. 

For your icing mix 1lb confectioners sugar, 1 stick of butter, 3 T vanilla, and 4 T pink lemonade.

Easy Manicotti

This recipe was a winner at my home and that does not happen often guys.  Can not say I came up with it on my own it was one of my fellow bloggers.  Although I do not have it in front of me to give them credit at the moment will have to add that one later.

boil your manicotti noodles preheat oven to 375
I used leftover spaghetti sauce from earlier meal
 place small amount of sauce in bottom of casserole dish
stick one cheese stick in each noodle
place noodles on top of sauce
pour rest of sauce over top and cover with shredded cheese
I used a combo of mozzarella and cheddar I had
bake until golden brown and bubbly

That is eat easy breezy and delicious.

Dad's 55th Birthday Cake

So, I tried to find the perfect cake.  I made a cake into a stop sign, white with black trim.  cut out the letters to spell speed limit and 55.  Very cute cake.  We all enjoyed it very much.  Found the idea on a birthday cake search for over the hill cakes.  Loving me some internet.  Anyway, I think it found out really great.

PB Jam Muffins

I made these for my middle son who lives off of peanut butter and  grape jelly sandwichs.  He wasnt overly impressed but I thought they were real good.  Not sure whose blog I found this recipe on, but I do appreciate them sharing. Thanks guys.

1-3/4 cups flour

2/3 cup brown sugar

2 1/2 tsp. baking powder

1/4 tsp. salt

3/4 cup milk

2/3 cup peanut butter

1/4 cup vegetable oil

1 egg

1-1/2 tsp. vanilla

jam or jelly, any flavor

Mix the flour, brown sugar, baking powder and salt together in a bowl. In a mixer bowl, beat together the milk, peanut butter, vegetable oil, egg and vanilla. Stir the wet ingredients into the dry ingredients with a spoon. (I needed to add another splash of milk at this point, because the batter was too dry and stiff.)

Grease a muffin tin. Put a tablespoon or two of the batter into each cup. Add a teaspoon of jam to the top. Put more batter over the jam to cover it. Bake at 350 degrees for 20-25 minutes. Cool in the pan for 5 minutes before removing.

Hamburger Hash

Not sure whose blog I got this recipe from but really enjoyed this one.

1 lb lean ground beef browned
a bag frozen obrien potatoes with peppers,onions
1 can diced tomatoes
1/2 T garlic
salt and pepper
Colby cheese shredded

Brown hb, strain and leave small amount of grease in pot.  Place O'brien potatoes in pot, salt and pepper, put lid on cook for 10 minutes. Add garlic powder, add tomatoes, cook 10 minutes.  Stir occasionaly.  Add cheese.

Finally, my February menu is up.  Sorry, for the delay guys.  I have been crazy busy with Dr.'s and had stuff on my mind.  Fortunatly, looks like things are returning to normal so here it is.  Better late than never correct.

Blog update =)

Have tried so many new recipes latly.  Being at home definatly has its advantages.  Tried beer bread, the family voted No. However, I must say it makes a Beautiful loaf of bread. Wish I had taken a picture.  Must get better at that.  They are just a hard crew to please. 

What else. Last night we had ooey gooey butter cookies.  A success. Yummy!!!

Anyway, things have been crazy running and lots of Dr. appointments but bare with me I will get this blog on track and post recipes soon.  If you ever want a recipe just message me.
